I've actually cooked a few things since we've been here but they weren't anything blog worthy. I've made scrambled eggs a few mornings, I found a video a while back on how to make really good scrambled eggs, but I can't find the link. Biggest tips I learned are to keep the eggs moving constantly and take them off the heat just before you think they're ready. We've also made pasta twice for dinner - literally, boiled pasta and dumped a jar of sauce on it. We did discover last night that Trader Joe's makes the most amazing jarred pasta sauce! We tried Trader Joe's Tomato Basil Marinara and got all crazy with it by using orecchiette pasta (looks like this) instead of plain spaghetti. Delicious. That's all I can say about that.
Also, this happened yesterday.
We're taking advantage of all of the things we can walk to right now, which includes a donut shop. Anyone know the why some places spell it donut instead of doughnut? I don't really care how they spell it, these were awesome. My plate is on the right, a glazed cake doughnut (donut) and a chocolate cake doughnut with chocolate icing. Ty had a maple glazed twist - my first maple glazed confection, yummy - and an apple fritter, which had big chunks of apple in it.
We walked there and back so that burned some of the calories off right? That's what I thought :)
This morning, we broke out an old favorite with a California twist. We made our Cali Breakfast Scramble and put it in a taco, using corn tortillas. We've eaten tacos almost everyday since we've been here and they haven't gotten old yet.

This was so easy to throw together, I cooked the meat (we used ground turkey) first and saved half of it for regular tacos later. I scrambled in 5 eggs with the leftover meat, added cheddar and tomato along with taco seasoning, chili powder and cumin. Top it with some avocado and you've got a great breakfast plus a little leftovers for tomorrow morning.
I'm in love with corn tortillas for the most part but I have to say, I think I prefer flour tortillas with my breakfast tacos. It was good, I just don't feel like it added much to the tacos.
